*SWEET* Corn

What I did today.....



Every year my mom and I try to "put up" lots of corn. Today we did our first bunch of a little over 15 dozen. Khara and Kelsey love to help shuck it and then in it comes for the real work to start. It takes a little time, but is fun to do and tastes wonderful all year long!! I guess you could call them spoiled, but my kids refuse to eat corn out of a can.

looks good and brings back memories of when I was a kid, we used to have to help our parents and it was a lot of fun.

I consider myself "spoiled," too. Maybe I am weird, but I love the whole "corn" process.

Looks Yummy! Could you tell me how you do your corn? I have had people tell me several ways. But....last year I did 20 some dozen & it didn't turn out so good. The corn is real chewy! Not sure what I did wrong. I just cut it off, put it in the micro for 3-4 min. then straight into freezer bags. HELP?!

Can you blame them for not wanting to eat it out of a can after having it fresh? Thankfully, we live in the country and can get fresh corn here too.

Deanna-
After I shuck and wash the corn then I "blanch" it which means, put the whole ears in boiling water for about 7-10 minutes. Take it out of the boiling water and immediately put the whole ears in cold water. When they are cool enough, cut the corn off and put in bags. "Blanched" corn is much easier to cut off than raw. (and a lot less messy) I don't season it at all until I take them out of the freezer to fix. Hope this helps. :-)

This sounds delicious - we don't have a garden, but a family at church gives mom and dad a load of corn each year, and since we help shuck,blanch, and freeze it, we get to enjoy the benefits! The kids love to shuck it...although Ryan has already notified me that he won't be eating any on the cob this year due to his loose front teeth!

Okay, that looks delicious. I haven't blanched corn in a couple years because we don't have a big freezer, but you're tempting me...

Yum! I always enjoy the finished product of sweet corn. I can't say that I always enjoyed the work. This year we lucked out...Adam and I were gone one weekend and that just happened to be the weekend that mom was 'putting up' her corn. My nephews did a superb job of helping her though. Yeah, I'm not much for canned corn either.

I wouldn't eat canned corn either, if I had fresh/frozen corn!!

I can just imagine what that tastes like!! I try to freeze a good bit of corn every year myself. Chris is always good to help me husk it....then the rest is up to me! UGH. I think I would enjoy it if I had my Mom or someone to join me. It looks like you all are set for winter. And to tell you the truth, I don't think my kids even know that corn comes in cans. We just can't gag it down.
Your hard work will all pay off this winter!!!

How wonderful to have your own corn. People keep posting pictures of their gardens and the yummy food coming out of them, and I'm sooooo sad. I'm hoping to find corn to do up this year. You just can't beat homegrown corn. I bought some frozen at the store and ended up throwing away most of it because it just isn't hardly worth eating.
